Orange Rice

Orange Rice


2 cups rice (soak for 2 hours, drain for later use)
150 ml freshly squeezed orange juice
150 ml water
20 gm butter
2 tbsp olive oil
2 pips garlic
1 tbsp grated ginger
1 cinnamon stick
2 star anise
4 cardamoms
½ an onion thinly sliced
3 slices turmeric
1 tbsp raisins
Salt to taste
Fried shallots and parsley for garnishing


  1. Sauté turmeric in olive oil for 1 minute. Discard turmeric slices.
  2. Add in butter, garlic, ginger and onion, stir fry until aromatic.
  3. Add in cinnamon stick, star anise and cardamom.
  4. Add in rice and raisins, stir well. Pour in orange juice and water. Bring it to boil. Add salt to taste.
  5. Transfer rice mixture into a rice cooker.
  6. Garnish with fried onions and parsley.

 Note: serves well with curry dishes.
