Jackfruit Sticky Rice

* 200g glutinous rice
* 200ml coconut milk
* 10-15 pieces jackfruit
* 1 tsp salt
* 40g sugar
* 1/2 cup water
* 4 stalks pandan leaf
* 1 tsp toasted sesame seeds

Coconut Sauce

  1. In a saucepan, add 1/4 cup of water, sugar, salt, and pandan leaves.
  2. Bring to a boil. Add coconut milk.
  3. Simmer the coconut mixture until thick. Set aside


  1. Rinse and drain the glutinous rice, then soak it in water for 3 to 5 hours.
  2. In a double steamer, bring water to a boil and add 2 pandan leaves.
  3. Place a piece of white thin cloth or banana leaves over the upper steamer.
  4. Pour in the glutinous rice.
  5. Steam for 10 minutes over high heat. Open the lid of the steamer and stir the glutinous rice. Add in 1/2 cup of water.
  6. Steam for another 8-10 minutes.
  7. Use 1/3 of the coconut mixture to mix into the cooked glutinous rice.
  8. Scoop a spoonful of sticky rice and stuff it inside the jackfruit. Repeat until finished. Sprinkle with toasted sesame seeds and drizzle with sweet coconut milk dressing. Enjoy!
