Nyonya Dark Soy Sauce Chicken

Ingredients A:

  • 2 Chicken Maryland or half chicken (cut into bite size)
  • 2 tsp Five spice powder
  • 1 tbsp Corn flour 
  • 1/2 tbsp Sugar
  • 1/2 tsp White pepper 
  • 1/2 tsp Salt 

Ingredients B: 

  • 2 Star anise 
  • 1 Cinnamon 
  • 1 tbsp Dark soy sauce
  • 2 tbsp Light soya sauce
  • 1 tbsp Chinese rice wine (optional)
  • 1 tbsp Sugar 
  • 1 tbsp Oyster sauce 
  • 4-5 cloves Garlic
  • 500ml Water 
  • 4 tbsp Oil
  • 1/2 tbsp Sesame oil 


  1. Marinate the chicken pieces with Ingredients A for a minimum of 1 hour before cooking.
  2. Heat oil in a wok, then sauté the garlic until aromatic. Add the chicken pieces, sauté for a minute, then add all of Ingredients B except the sesame oil.
  3. Bring to a boil and simmer chicken pieces for 25-30 minutes or until the chicken is tender and the gravy has thickened. Add in sesame oil before dishing out.
